Spiral Cookies

These are the cookies, which I find really imprssive and easy to make at once. They are similar to classic shortbread cookies, but with a little twist. They work great as a gift or just as an every day treat.

Ingredients:

  • 200g Butter
  • 150g Sugar
  • 2 tsp Vanilla Extract
  • an Egg
  • 300g Spelt Flour
  • 1 tsp Baking Powder
  • 30g Cacao

Mix butter and sugar until creamy and light yellow colored. Add egg and vanilla extract and keep mixing. Pour the flour with baking powder into the micture gradually. Stir the dough until mixture becomes smooth and tender. Divide dough into two bowls and add cacao to one of them. Stir in. Form the dough round, wrap with plastic wrap and place them in refridgerator for about half an hour. After that, roll them out into two rectangles. Put the cacao part on the light, classic vanilla one.  Make the edges straight and even. Roll the dough up to create a fancy pattern. Wrap it with plastic wrap and cool down in the fridge for 30 minutes again. Heat the oven to 180C (about 350F) degrees. Slice the dough roll as thinly as possible. Place the slices on a baking tray covered by baking paper not to make cookies stick. Bake for 12-15 minutes, until golden brown. Leave the cookies to cool down to he room temperature, by this time they’ll be crispy and delicious!
